1/3rd cup of packed brown sugar
1/3 cup of chopped pecans
3 tbsp of butter
1 unbaked (9-inch) pie shell
1 cup of evaporated milk
1/2 cup of water
1 & 1/2 cup of canned pumpkin
3 eggs, lightly beaten
1/2 cup of granulated sugar
1/2 cup of packed brown sugar
1 & 1/2 tsp of pumpkin pie spice
1 tsp of salt
1/2 cup of heavy whipping cream or whipped cream, whipped
Combine the 1/3rd cup of brown sugar, pecans, and butter in a bowl and mix well. Spread into the pie shell. Bake at 400 degrees for 10 minutes. Remove from oven and reduce temperature to 350 degrees.
Scald the evaporated milk and water in a saucepan over medium heat. Remove from heat. Combine the pumpkin, eggs, granulated sugar, 1/2 cup of brown sugar, the pumpkin pie spice and salt in a large bowl and mix well. Beat the scalded milk mixture. Pour into the prepared pie shell. Bake for 50 minutes. Cool and top with whipped cream.
