Chocolate Raisin Muffins
1 c. flour
2/3 c. sugar
1/4 c. cocoa
2 tsp. baking powder
1/2 tsp salt
1/2 c. milk
1/4 c. vegetable oil
1 egg, lightly beaten
1 c. raisins
1/2 c. chopped nuts
Combine dry ingredients in a glass bowl, add milk, oil and egg, stir until just moistened. Fold in raisins and nuts. Fill paper muffin lined cups one-half full with batter and place in microwave cupcake or muffin baker. Microwave on high for 2 to 2 1/2 minutes, turning twice. Repeat with remaining batter until muffins are done. Adjust microwaving time according to your microwave so watch them closely. Serve warm. |
